NEW CHEF IN RESIDENCE

Aitor Jeronimo Orive - alumni of the Michelin-starred kitchens of The Fat Duck in London, Mugaritz in San Sebastián and Neura in Bilbao is coming to Shirley.

With tenure at some of the most iconic restaurants in the world, Aitor most recently opened Basque Kitchen at the iconic Fullerton Hotel in Singapore where, as Chef Patron, he earned his Michelin star.

A proud descendant of Basque Country, Aitor’s love for cooking was cultivated at a young age. He grew up on rustic home cooked fare lovingly prepared by his grandparents — his paternal family hailing from the Basque region of Andalucía, and his mother’s family from the Southern Basque region of Biscay — it was only natural that Aitor took to cooking to express his heritage.

His residency at Shirley will celebrate all things Basque and more broadly Spanish fare. Taking a casual approach with quality produce and honed techniques, his menu is designed to be shared and enjoyed with friends… old and new!

What exactly is Shirley?

Shirley is a small, ever-changing restaurant located in Kyneton.

Unlike most restaurants, our kitchen is offered as a residency to guest chefs. Their menu, their food. Some residencies may last a few months. Others a few weeks. It all depends on the chef and their availability.

Think of us as a dynamic restaurant that will change chefs and menus throughout the year.

This makes it an exciting venue for everyone involved as we will always be evolving and keep you guessing what’s next.

Accomplished chef Dane Hewson (ex. Embla, Grossi) brings you refined high end italian cooking in a fun and accessible red and white checker atmosphere.   

It’s dancing in your nonna’s kitchen after two bottles of wine... and maybe a little too much pasta.

Presented alongside partner and designer Lydia Greenwood - Nostra literally means “ours” and that’s what it is. A meal designed to be shared with love, family and friends old and new.

Oh and of course lots and lots of vino.

We’re right in the middle of town, but at times it is hard to organise transport last minute so please plan your travelling to and from the restaurant ahead of time.
